The hotbox was founded by John Fahy early in 2023. Drawing from his 12 plus year’s experience as owner and head baker at the island bakers, all hotbox pizzas are baked on a sourdough base using the finest ingredients available. Prior to running his bakery, other accolades include working in the royal kitchens, the waterside inn, bray, the French laundry in California and London’s St John restaurant.
The hotbox is a bespoke, one off trailer conversion, offering a small menu , usually 4-5 pizzas , changing on a weekly basis, depending on local seasonal availability. The pizzas are baked slightly lower and slower than the currently on trend ‘Neapolitan’ style pizzas , yielding a slightly crispier finish.
